Today and for over 100 years in the historic, mountaintop town of Montepaone in Calabria, Italy, the Montillo family makes homemade wine and vino cotto (a naturally-sweet, cooked wine syrup) for their personal use. In 1970, Vito Montillo, Gregorio’s father, moved his family from their southern Italian home to Newton, Massachusetts where they started a new life together, carrying on most of their wonderful Italian traditions. To this day, one of Greg’s annual favorites is making homemade wine and vino cotto. In August 2008, husband and wife team Greg and Deena Conti Montillo followed their dream to be the first producer of authentic vino cotto in the United States and established Montillo Italian Foods. Just two months later, full of hope and enthusiasm, their first bottle of Vino Cotto di Montillo was sold. Over the years, they’ve received many complements from their Italian customers who say, "It tastes just the way they remembered it as a kid living in the old country." For Greg and Deena, hearing these words equals success and warms their hearts. Greg and Deena are very proud to share this small part of their Italian heritage with you. They’ve made it possible for you to experience authentic vino cotto, also known as vincotto originale, by sourcing only the best California wine grapes, supporting US workers and their families and following all US FDA regulations for a safe, shelf-stable product. What is Vino Cotto?

Vino Cotto by Montillo Italian Foods is an authentic, naturally sweet cooked wine with 0% alcohol and 0% vinegar. Its refined flavor hints of figs and plums, although it’s made from 100% premium wine grapes, nothing else.

Is it thick like honey or molasses? No. Vino cotto is more like a simple syrup, so it’s easy to work with and has a smooth taste and texture. If a thicker syrup is desired, simply reduce some over low heat. You’ll love its versatility! 

Montillo Italian Foods is proud to be the first American producer of vino cotto, supporting Californian grape growers and their hard workers. Making our vino cotto requires continuous climate control and significant time and labor. Its high-quality seasonal ingredient, wine grapes, and the entire process of producing it make vino cotto, unlike any other condiment or ingredient. As such, each vintage will have its own unique taste and texture.

Although Vino Cotto di Montillo is not certified gluten-free, nut-free, dairy-free or seed free, the only ingredients in our cooked grape must syrup are wine grapes and their naturally-occurring sulfites. We do not add sulfites.

It is cholesterol free and contains no added sweeteners, artificial flavors, chemical colorants such as caramel coloring, nor any alcohol or vinegar. Vino cotto is that yummy sweet flavor you taste in condiment-grade balsamic vinegar and in fortified wines such as Marsala. 

Simply add red wine vinegar to our vino cotto to easily make a healthy balsamic vinegar that’s better for you than certain I.G.P. brands of balsamic vinegar di Modena that add caramel coloring. With your homemade vinegar, prepare mouthwatering balsamic chicken, pork chops or tenderloin, glazed salmon, even asparagus, Brussels sprouts, carrots, and string beans, to name a few. And, for an amazing balsamic vinaigrette, add some olive oil to your balsamic vinegar and drizzle some over your favorite salad combinations…So good!
